He specialises in modern British cooking with French Influences and regularly visits France, California and other parts of the world for inspiration. Menus change frequently with the seasons, and where possible organic and local produce is used. The brasserie offers an alternative to the hotel restaurant, with its garden overlooking the sea. A very relaxed atmosphere, again the creations of Kevin Mangeolles in a simpler format, using where possible organic and local produce. Menus are seasonal, and the food, is contemporary brasserie style with a European influence. Fish features regularly on the menu.
